If you like homemade custard, then I think you'll like this pie.
Ingredients:
pastry for a single 9 inch pie pan
4 eggs, beaten
3/4 cup granulated sugar
a pinch of salt
1 teaspoon pure vanilla extract
1 egg white, gently whisked
2-1/2 cups whole milk, scalded
1/4 teaspoon ground nutmeg
1 drop of yellow food coloring (optional)
for a more intense yellow color, add a drop of yellow food coloring.
Directions:
1. Preheat oven to 400 degrees F (205 degrees C).
2. Mix eggs, sugar, salt and vanilla together.
3. Stir well.
4. Blend in the scalded milk.
5. Line pie pan with pastry and brush inside bottom and sides of shell with gently beaten egg white to help prevent a wet crust.
6. Pour custard mixture into pie shell.
7. Sprinkle with nutmeg.
8. Bake in a preheated 400 degree oven for 30 to 35 minutes or until a knife inserted in the center comes out clean.
9. Cool on rack.
