Custard Mochi

A local favorite. Butter mochi with a thin layer custard at top.
Ingredients:
2 cups mochiko rice flour (16 ounce)
2 cups sugar
4 eggs
4 cups milk
3 teaspoons baking powder
2 teaspoons vanilla extract
1/2 cup butter, softened
Directions:
1. Grease a 9 x 13 inch pan. Preheat oven to 350 degrees.
2. Cream sugar and butter together in a mixing bowl.
3. Beat in eggs, one at a time.
4. Add mochiko flour, baking powder, vanilla extract and milk.
5. Mix till batter is smooth.
6. Bake for one hour.
7. Allow to cool for 1-1 1/2 hours, then slice.
