Hubby and I went wild over these! Takes sweet potatoes to a whole new level. From the March Cooking Light. These go perfect with pork. The rest of the menu was Deen Bros orange ginger grilled pork chops, cucumbers in sour cream, and for dessert. Read more ...grilled spiced fresh apricots with vanilla ice cream.
Ingredients:
2 pounds sweet potatoes, peeled, cubed
1 tablespoon butter
1/4 cup shallots, finely chopped
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon green curry paste
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1/8 teaspoon cayenne
1/3 cup half and half
1 tablespoon fresh lemon juice
Directions:
1. Cook potatoes covered with water until tender. Drain, return to pan, keep warm.
2. Melt butter in small skillet over medium heat. Add shallots, cook until tender. Stir in brown sugar, salt, curry powder, cumin, cinnamon, and cayenne; cook 1 minutes, stirring constantly. Add mixture to potatoes along with half and half and lemon juice. Mash with potato masher.
3. NOTE: The original recipe called for curry powder. I happen to like Thai green or red curry paste better. You can use whatever YOU want!
