This dish is a great side to a summer bbq with a crowd. It has a bright color to it and very tasty! This is one of my favorites - we've been eating it with 'hots and hams' out the bungalow for years thanks to my Auntie! Read more !
Ingredients:
1 cup raw rice or 2 cups of cooked rice
1 small package of frozen peas
1 1/2 cups chopped celery
1/2 cup green onion
1/2 cup blanched almonds
dressing
2 tbsp vinegar
1/2 cup veg oil
2 tbsp soy sauce
2 tbsp curry powder
1/2 tsp salt
1/2 tsp white sugar
1/2 tsp celery seeds
Directions:
1. Cook rice and chop up celery, green onion.
2. To blanche almonds, put in a frying pan on med-high heat and cook for a few minutes.
3. Put all ingredients together and mix (put frozen peas in last).
4. Put ingredients to dressing in a sealed container and shake to mix.
5. Add to salad and stir.
6. Enjoy!
