Curry Chicken W/ Spinach

Found this in Simple & Delicious- another way to use the spinach my daughter loves.
Ingredients:
1 lb boneless skinless chicken breast, cubed
2 teaspoons curry powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
1/2 cup onion, chopped
1 (13 1/2 ounce) can coconut milk
2 tablespoons tomato paste
3 cups fresh spinach
1 cup tomato, chopped
Directions:
1. Mix together curry, salt & pepper- Sprinkle over chicken.
2. In a large skillet, saute the onion and chicken until no longer pink, about 8 minutes.
3. Stir in coconut milk and tomato paste. Bring to a boil.
4. Reduce heat and simmer uncovered for 5 minutes.
5. Add spinach and tomato. Cook for 2-3 more minutes.
6. Serve over rice.
