Yummy Chicken Salad!
Ingredients:
1 tablespoon dijon mustard
3/4 cup mayonnaise (i use light)
1/8 teaspoon salt
3/4 teaspoon curry powder
4 cups chopped chicken, cooked (i use trader joes fresh grilled chicken)
1/4 cup celery, slice
1/3 cup raisins
2 tablespoons green onions, sliced
1/3 cup slivered almonds, toasted
green grape, cut in two
Directions:
1. Combine 2 T juice drained from pineapple with mayo, mustard, curry, and salt - set aside. Mix chicken with remaining ingredients, add mayo mix and blend - .
2. If you're cooking your own chicken this will take longer. Otherwise it's very quick and easy.
