I was home one night wanting to make dinner and I got creative. I mixed and matched ingredients I had in my fridge and pantry. That is how I came up with this new chicken curry recipe. Delicious!
Ingredients:
6 chicken thighs
2 tablespoons apple cider vinegar
1 cup onion, cut in large squares
1 1/2 cups celery, cut in large pieces
1/2 cup fresh basil
2 (8 ounce) cans great northern beans
2 tablespoons olive oil
1 tablespoon coarse black pepper
1 teaspoon lemon pepper
1 tablespoon garlic powder
3 tablespoons curry powder
1/2 teaspoon oregano flakes
salt
Directions:
1. On high heat sautee onions and celery on olive oil.
2. Then add fresh basil, pepper, lemon pepper, garlic powder, curry and oregano flakes.
3. Once onions and celery are mixed with spices add chicken thighs.
4. After mixing thighs with vegetables add beans.
5. Add vinegar.
6. Cover and let it simmer for about 15 minutes.
7. Add salt to taste.
