Curry and Coconut Chicken Kebabs

1. /4 c. light coconut milk
2. T. curry powder
3. T. lime juice
4. t. salt
5. /4 t. cayenne pepper
6. lb. chicken breast, cubed
7. c. large green grapes
8. red bell peppers, cut into chunks
9. Whisk together coconut milk, curry, lime and cayenne, and salt. Toss chicken chunks in marinade and chill for 30 min.
10. Thread chicken onto skewers, alternating chicken, grapes, and pepper. Grill until cooked through.
11. Serve with Coconut CousCous:
12. c. water
13. /2 c. light coconut milk
14. /2 t. salt
15. c. dry quick cooking couscous
16. /4 c. slivered almonds
17. /4 c. sliced fresh mint
18. Bring water, coconut milk and salt to boil. Stir in couscouc. Cover and remove from heat. Let stand until liquid is absorbed (about 5 min). Fluff couscous with fork and add mint and almonds before serving.
