Curried Zucchini/Potato Soup

Ingredients:
1 tablespoon olive oil
1 medium chopped onion (3/4 cup)
1 tablespoon salt
2 minced garlic cloves
2 teaspoons curry powder
1 1/2 lbs zucchini, sliced 1 inch thick (3 zucchini)
1 baking potato, peeled and cut into 1 inch chunks
4 cups water
Directions:
1. In a big pot, heat the oil on medium heat.
2. Add onion and salt.
3. Cook until onion is tender and translucent (4-5 minutes, stirring occasionally).
4. Add garlic and curry.
5. Cook 0.5-1 minute, stirring constantly, until fragrant.
6. Add zucchini, potato, water.
7. Increase heat.
8. Once it boils, turn heat to medium-low.
9. Cook 10-15 minutes, until veggies are tender.
10. Puree soup in blender.
