Curried Scrambled Tofu

Ingredients:
1/3 block firm tofu, drained for about 15 minutes (we use 'soft')
1/2 tsp turmeric
2 tbsp milk (optional)
1/2 tsp oil
1/2 tsp black mustard seeds
2 tbsp diced onion
2 tbsp diced bell pepper
1/4 cup diced tomato
1 salt and pepper
1 tsp cumin powder
2 tsp coriander powder
1/4 tsp paprika or cayenne
Directions:
1. In a small bowl, smash the tofu with the salt and turmeric. Set aside.
2. In a medium skillet, heat the oil until it is sizzle-hot. Add the black mustard seeds and cover the pan while they pop. As soon as the popping quits, add the onion and the masala. Stir and cook for a minute.
3. Add the bell pepper and the tomato. Keep cookin' for another 1-2 minutes.
4. Add the tofu mixture to the pan. Cook through
