Quick and easy dish.
Ingredients:
1 cup brown rice
2 cups chicken broth
1 teaspoon curry powder
1 onion, chopped
2 garlic cloves, chopped
8 ounces firm tofu
15 ounces pink beans
15 ounces whole kernel corn
15 ounces diced tomatoes
Directions:
1. Prepare rice with broth and curry separately. Saute onion, garlic until soft.
2. add remaining ingredients, add rice. Serve.
