Curried Rice

Ingredients:
1 tablespoon cooking oil
1 cup minced onion
1 cup chopped green pepper
1/2 cup currants
2 cups uncooked rice
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon curry powder
1 quart chicken broth
Directions:
1. Heat oil in a wok; stir in onion, green pepper and currants, stirring until tender (about 10 minutes). Stir in rice and seasonings; brown slightly. Pour broth over rice and mix well. Bring to a boil, cover, simmer 20-25 minutes or until rice is tender.
