Curried Rice

The curry adds a great color and a wonderful flavor to the rice. Serve with any grilled or roasted meats.
Ingredients:
1 tablespoon butter
1/3 cup onion, finely chopped
1 garlic clove, minced
1 tablespoon curry powder
1 bay leaf
salt, to taste
fresh ground black pepper, to taste
1 cup uncooked rice
1 1/2 cups chicken broth (low-sodium canned or homemade)
Directions:
1. Heat butter in a saucepan. Add the onion and garlic. Cook, stirring, until soft. Add the remaining ingredients, except the chicken broth, stirring to coat grains.
2. Add the chicken broth. Cover. Bring to a boil. Reduce heat. Cook 15 to 20 minutes, until rice is tender. Remove the bay leaf and serve.
