Ingredients:
1/3 cup(s) capers
1/2 teaspoon(s) cardomom
1/4 teaspoon(s) cayenne pepper
1/4 teaspoon(s) cinnamon
1/4 teaspoon(s) cloves
1/2 teaspoon(s) coriander
3/4 cup(s) corn oil
1 teaspoon(s) cumin
1 cup(s) currants
1 teaspoon(s) dry mustard
1/2 teaspoon(s) mace
1/4 teaspoon(s) nutmeg
2 teaspoon(s) pepper
1 pound(s) red lentils
2 teaspoon(s) salt
2 tablespoon(s) sugar
1/2 teaspoon(s) tumeric
1 1/2 cup(s) very finely chopped red onion
1/2 cup(s) wine vinegar
Directions:
1. In large bowl whisk together first 15 ingredients and set aside.
2. Wash lentils and cook for 5 min(approx). Do not overcook!!
3. Rinse and drain and combine with dressing and refrigerate overnight. AT LEAST 2 hours before serving add currants and capers and onions. Let marinate.
