Curried Potato Soup

this is a soup i made tonight that's delicious, healthy, and comforting.
Ingredients:
4 idaho potatoes peeled and chopped
1 onion diced
3 cloves of garlic minced
i tablespoon ginger minced
4 cups water
1 tablespoon vegetable oil
1 teaspoon cumin powder
4 teaspoons madras curry powder
salt, and sambal olek to tatse
Directions:
1. heat the vegetable oil over medium high heat in a large pot and add the onion.
2. cook the onion for 5 minutes then add the garlic and ginger cooking for one more minute.
3. add the water and potatoes. bring to a boil.
4. simmer for 15 minutes or until the potatoes are tender. blend in batches or use an immersion blender like i did.
5. now add the spices, salt and sambal olek. if you care for your soup to have a silken texture pass i through a fine sieve.
6. serve and enjoy!
