Curried Peanut Rice

This curried peanut rice is just the right accompaniment to your favorite Chinese stir fry.
Ingredients:
curried peanut rice
2 tbs. vegetable oil
1/4 cup sliced green onions
2 tsp. curry powder
1 can (10 3/4 oz.) condensed chicken broth
1/2 cup frozen peas
1 1/4 cups quick cooking rice, uncooked
1 1/4 cup coarsely chopped unsalted peanuts
Directions:
1. In a 2- quart saucepan over medium heat, in hot oil, cook green onions and curry powder until onions are tender. Stirring occasionally.
2. Add broth and peas. Heat to a boil. Add rice. Remove from heat and cover. Let stand 5 minutes or until most of the liquid is absorbed. Stir in peanuts. Fluff with a fork before serving. Makes 2 1.2 cups
