This crunchy, colorful salad makes a delicious picnic side dish.
Ingredients:
1 (12-ounce) package tricolored rotini
2/3 cup plain fat-free yogurt
1/4 cup light mayonnaise
3 tablespoons fresh lime juice
2 teaspoons sugar
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/4 teaspoon ground black pepper
1 granny smith apple, diced
1/4 cup dried cherries or sweetened dried cranberries
4 green onions, thinly sliced
2 carrots, grated
1/2 cup soy nuts* or slivered almonds, toasted
Directions:
1. Cook tricolored rotini according to package directions, omitting salt and fat; drain.
2. Stir together yogurt and next 7 ingredients in a large bowl. Add pasta, apple, and next 3 ingredients, tossing to coat. Sprinkle with soy nuts. Serve immediately. Prep: 25 min., Cook: 15 min.
