Curried Okra (bhindi Ki Subji)

A very different way to prepare okra...authentic Indian recipe given to me by a friend years ago. Not hot and spicy...just tasty!
Ingredients:
bhindi ki subji (curried okra)
in a skillet, sauté onions in oil
4 green onions with tops – cut up
2 tblsp vegetable oil (may use olive oil)
to oil & onion, mix in
2 tsp. curry powder
1/2 tsp. ginger
1/2 tsp. paprika
add vegetables to above mixture
1 lb. small okra – cut each pod in half
1 large potato – sliced thin
2 medium fresh tomatoes – cut up in wedges
cover and simmer until potatoes are done.
add salt to taste only after the dish is completed.
(no water is used in this dish.)
