bhindi ki subji (curried okra) |
in a skillet, sauté onions in oil |
4 green onions with tops – cut up |
2 tblsp vegetable oil (may use olive oil) |
to oil & onion, mix in |
2 tsp. curry powder |
1/2 tsp. ginger |
1/2 tsp. paprika |
add vegetables to above mixture |
1 lb. small okra – cut each pod in half |
1 large potato – sliced thin |
2 medium fresh tomatoes – cut up in wedges |
cover and simmer until potatoes are done. |
add salt to taste only after the dish is completed. |
