Curried Mushroom Turnovers

These savory little turnovers are very good!.. They do take a bit of work to make, but they are so worth it!... A special treat for the holidays! I usually make them ahead of time and freeze them (un-baked) in a freezer bags! Read more ! When company comes over I can grab one from the freezer and I only need to add another 8-10 minutes when frozen to the baking time!
Ingredients:
you will need 1 recipe for cottage cheese pastry dough
3 tablespoons butter
1 pound mushrooms, chopped in small pieces
1/2 onion, chopped
1 teaspoon curry powder or to taste
1/2 teaspoon turmeric (optional)
1/8 teaspoon cayenne
1 tablespoon flour
1 tablespoon lemon juice
1/3 cup cream
2 tablespoons chopped fresh parsley
salt & pepper
Directions:
1. Heat butter and cook mushrooms and onion until soft. Stir in curry, turmeric, cayenne and flour and cook about 2 minutes. Add lemon juice and cream and cook until thickened. Stir in parsley and taste for salt and pepper. Chill
2. To assemble: take 1 ball of dough from refrigerator and roll to about 1/4 inch thick. Using a glass or cookie cutter, press out circles about 2 1/2 inch rounds. place a scant teaspoon of filling in the center of each round, fold over and press gently, carefully sqeezing just the edges of dough together. Lay each on a wax paper lined cookie sheet and crimp with a fork around edges again. Wipe off fingers if they get filling on them to keep turnovers clean.
3. Place on an ungreased baking sheet (remove waxed paper unless freezing) and bake in a preheated oven at 350 degrees for about 25 minutes or until golden. *********** Note: These can be frozen on cookie sheets until solid then placed in freezer bags until ready to bake. Add 8-10 minutes to bake from frozen. Do not thaw!
