Serve Curried Beef n Vegies with a ring of rice
Ingredients:
3 1/2 cups rice
500 g beef, minced
2 celery stalks
2 large onions, diced
250 g spinach, sliced
250 g broccoli, diced
250 g carrots, diced
500 g sweet potatoes, diced
50 g fresh green beans
80 g kidney beans
50 g capsicum, diced
40 g curry powder
2 cups water
40 ml olive oil
Directions:
1. Prepare vegetables
2. In Large Saucepan boil 8 cups water
3. In lge Frypan fry Onions in 40 mL Olive Oil, set aside
4. Brown meat
5. Add vegetables, curry and water to meat
6. Simmer meat with vegies for 15 minutes
7. Add Rice to boiling water and cook 15 minutes
8. Continue cooking meat and vegies
