Curried Lentil, Wild Rice and Orzo Salad

Ingredients:

  • 1/2 cup wild rice
  • 2/3 cup lentils
  • 1/2 cup currants
  • 1/4 cup red onion
  • 1/3 cup almonds
  • 1 tsp cumin
  • 1/2 tsp sugar , salt , coriander
  • 1 pinch cinnamon , cloves, cayenne pepper
  • 1/4 cup canola oil

Directions:

  1. Cook pasta, rice and lentils separately according to directions.
  2. Add currants and onion
  3. Mix all other ingredients
  4. Pour over and refridgerate up to 24 hours or more
  5. Sprinkle almonds on top before serving
