Curried Egg & Watercress Tea Sandwiches

Egg sandwiches with a twist!
Ingredients:
4 eggs, hard-boiled, peeled
1/4 cup good-quality mayonnaise
2 teaspoons curry powder
2 tablespoons chopped parsley
2 ounces unsalted butter, softened
12 slices whole wheat bread
1 bunch watercress
Directions:
1. Mash eggs with mayonnaise and curry powder, stir in parsley and season to taste.
2. Butter bread and divide filling between 6 slices.
3. Add cress, top with remaining slices, remove crusts and serve cut into quarters.
