Curried Chicken Salad With Green Grapes

This goes together quickly and makes a nice light meal in hot weather
Ingredients:
1/4 c vegetable oil
2 tbsp grated onion
3/4 tsp curry powder(or a bit more to taste)
1/2 tsp salt
1/2 c plain yogurt
2 tsp lemon juice
1/2 tsp dijon mustard
3 c cooked cubed chicken
2 stalks celery, chopped
1 c green seedless grapes, halved
Directions:
1. In a small saucepan heat 2 tbsp oil
2. Add onions and cook over low heat for 3 minutes
3. Stir in curry powder and salt and cook an additonal 30 seconds
4. Remove mixture from heat and let it cool
5. Stir in yogurt, lemon juice and mustard
6. Put chicken in a serving bowl add curry mixture, the remaining 2 tbsp oil and celery
7. Toss to mix
8. Add grapes and toss again gently
9. Chill salad
10. Serve on lettuce leaves
