A simple chicken salad with a creamy smooth dressing. I hope to try this soon.
Ingredients:
3 cups cooked chicken breasts, cubed
1 1/2 cups grapes, halved
1/2 cup sliced celery
2 tablespoons green onions, sliced
1/2 cup red pepper, diced
3/4 cup low-fat mayonnaise
2 tablespoons orange juice
1 teaspoon curry powder
fresh ground pepper, to taste
Directions:
1. Combine all salad ingredients.
2. Combine all dressing ingredients in a small bowl and whisk together until smooth.
3. Toss the dressing with the salad and serve.
