Quick and easy to make and can serve in a sandwich over cantelope and as a main meal.
Ingredients:
2 cups cubed cooked chicken breast
3/4 cup chopped apple
3/4 cup dried cranberries
3/4 cup mayonnaise
1/2 cup chopped walnuts
1/2 cup chopped celery
2 teaspoons lemon juice
1 tablespoon chopped green onion
1 teaspoon curry powder or more if want
6 lettuce leaves
6 croissants split
Directions:
1. 1. In a large bowl mix the first 9 ingredients on the list.
2. 2. Place lettuce on the croissant.
3. 3. Top with the chicken mixture.
