Curried Chicken and Summer Fruit Salad

Chicken, water chestnuts, grapes, melons, dressed and served on lettuce.
Ingredients:
1 cup mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon curry powder
1 teaspoon soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups cooked chicken, cubed
8 ounces water chestnuts, drained and quartered
1 1/2 cups red seedless grapes, halved (1/2 lb)
1 cup honeydew melon, cubed (1/2 lb)
1 cup cantaloupe, cubed (1/2 lb)
6 lettuce leaves
1/2 cup almonds, sliced and toasted
Directions:
1. Combine the dressing ingredients and mix well.
2. Add salad ingredients minus the lettuce leaves and almonds, toss to coat.
3. To serve, place one lettuce leaf on each of 6 serving plates, top with salad, garnish with almonds.
