Curried Apricot Sauce

Ingredients:
1 tablespoon vegetable oil
1 shallot, finely chopped
1 teaspoon curry powder
1/4 cup red wine
2 tablespoons apricot preserves
1 cup mayonnaise
fresh lemon juice
Directions:
1. Heat oil in small skillet over medium high heat.
2. Add shallot and sauté until tender, about 3 minutes.
3. Stir in curry powder and cook 1 minute.
4. Add wine and preserves and stir until blended. Cook 1 minute.
5. Remove pan from heat and stir in mayonnaise. Season to taste with lemon juice.
