CURLY CUCUMBER AND RADISH SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Reese Estate in Argyle, Texas in 1992.
Ingredients:
10 radishes
2 medium seedless cucumbers
1 fresh jalapeno pepper seeded and sliced into rings
2 tablespoons chopped sorrel or chopped fresh basil
1/2 teaspoon granulated sugar
1/4 teaspoon salt
1 tablespoon olive oil
1 tablespoon white wine vinegar
Directions:
1. Set aside one whole radish for garnish then thinly slice five of the remaining radishes.
2. Cut rest of radishes into halves or quarters.
3. Use a vegetable peeler to cut thin lengthwise slices from cucumbers discarding first slice.
4. Combine radish slices, halves and quarters, cucumber, jalapeno, sorrel, sugar and salt.
5. Drizzle with olive oil and white wine vinegar then toss gently to coat.
6. Garnish with reserved whole radish.
