We love cucumbers, even our dogs eat them. This recipe is perfect on a hot day for a refreshing change. I even put some on a hamburger instead of regular pickles it was really good.
Ingredients:
1 cup water
1/4 cup red-wine vinegar
2 teaspoons honey
3/4 teaspoon salt (optional)
1/4 teaspoon hot pepper sauce (optional)
2 large unpeeled cucumbers
1 small red onion, thinly sliced (about 3/4 cup)
1 tablespoon chopped fresh dill or 1 teaspoon dried dill
fresh dill sprigs for garnish
Directions:
1. In a large glass or ceramic bowl, combine the water,vinegar, honey, salt, and hot pepper sauce.Mix well.
2. Thinly slice cucumbers. Add cucumber, red onion, and chopped dill to marinade. Gently toss until ingredients are well combined.
3. Cover bowl with plastic wrap. Let stand for at least 1 hour at room temperture or refrigerate for up to 4 hours.
4. Just before serving, toss well. Using a slotted spoon, place the cucumbers on serving plates. Granish with fresh dill sprigs. Serve immeddiately.
