An appetizer par excellence! Cucumber Sandwiches are simple, basic and tasty finger food.
Ingredients:
1 firm, young cucumber
1/2 teaspoon salt
1/2 teaspoon fine ground white pepper
8 slices white sandwich bread; crusts removed
2 tablespoons softened butter
Directions:
1. Peel and thinly slice a young firm cucumber.
2. Sprinkle the salt on the cucumber and allow to rest about 10 minutes.
3. Blot the cucumber dry and arrange on buttered slice of crustless bread.
4. Sprinkle on a little white pepper and top with another buttered slice of bread.
5. Repeat for each sandwich. Cut sandwiches into required shapes and serve.
