A healthy and light recipe I came up with using ingredients that I thought would work well together.
Ingredients:
1 whole english cucumber
1/2 a small red onion
3 roma tomatoes
1/4 cup kalamata olive, halved
2 tablespoons tarragon flavored white wine vinegar
2 tablespoons extra virgin olive oil
2 teaspoons finely chopped garlic
2 teaspoons finely chopped fresh oregano
2 teaspoons finely chopped fresh tarragon
1 teaspoon french grey salt
Directions:
1. Slice or chop cucumber and onion. Seed and dice tomatoes. Mix all ingedients in a medium bowl and cover and chill for one hour. Serves 4.
