A quick pickle like cucumber salad, great on a summer day and way to use up all those cucumbers! While there is not much active time on these, they do take time to soak, so make them the day before.
Ingredients:
2 cucumbers
1 small onion
1 teaspoon salt
1 cup white vinegar
1 cup sugar
2 cups water
Directions:
1. Peel and thinly slice the cucumbers and onions placing them in a large bowl. Sprinkle with salt and toss. Cover with water and allow to soak in the refrigerator 1-2 hours.
2. Combine the vinegar, sugar, and 2 cups of water in a pot on the stove. Heat until the sugar is completely dissolved. Allow to cool completely.
3. Drain the water from the cucumbers, lightly rinsing (I mean lightly!). Place back into the bowl and pour the vinegar-sugar liquid over the cucumbers. Chill another 1-2 hours and serve.
