Gosh this is so easy and so good! Also this recipe can be used with Splenda, instead of sugar.
Ingredients:
2 cucumbers
2 tomatoes
1 medium onion (sweet is better)
1/4 cup vinegar
1 cup sugar
Directions:
1. Peel skin from cucumbers if desired and seed them.
2. Chop tomatoes in large chunks.
3. Chop onion in rings and quarter.
4. In a large bowl add sugar and vinegar.
5. Whisk until sugar is dissolved.
6. Add the cucumbers, tomatoes and onions to the sugar and vinegar mixture.
7. Better if served right away.
8. Makes 4 servings.
