Ingredients:
4 medium cucumbers, seeded and diced
2 tablespoons green onions, sliced
2 tablespoons brown sugar
1/2 cup rice vinegar
3 tablespoons soy sauce
2 teaspoons finely chopped peanuts
1/4 teaspoon crushed red pepper flakes
Directions:
1. In lg bowl, combine the first 5 ingredients.
2. Mix well and chill for 15 minutes.
3. Add peanuts and red pepper flakes.
4. Toss well.
