A perfect accompainment to either pappadums or a spicy curry
Ingredients:
1/2 cucumber (diced)
1/2 teaspoon salt
1 pint natural yoghurt
2 spring onions (trimmed & sliced)
1 teaspoon ground cumin
1 teaspoon caster sugar
2 tablespoons lemon juice
2 tablespoons fresh mint (chopped)
Directions:
1. Place the diced cucumber in a bowl and sprinkle with salt. Stir in the other ingredients and chill until ready to serve.
