Cucumber Poppy Seed Salad

I love to make this salad in the Summer. It has a sweet and sour kick to it and it is great with grilled steak.
Ingredients:
3 lebanese cucumbers
1 roasted red bell pepper (i used spanish peppers in a jar)
2 tbsp chopped cilantro leaves
2 tbsp rice vinegar
4 tbsp grape-seed oil
1 tbsp sugar
1 tbsp poppy seeds
salt and pepper to taste
Directions:
1. Wash the cucumbers and slice them into medium/thin slices and transfer to a serving bowl.
2. Finely slice the pepper and add to the cucumber.
3. Make the dressing by mixing the cilantro, vinegar, oil, sugar, poppy-seeds, salt and pepper.
4. Pour over the cucumber and blend well.
5. Check the seasoning and adjust salt or sugar if needed.
6. Serve immediately.
