Cucumber Mojitos

Ingredients:
2 cups cold water
1 cup cucumber, coarsely chopped
1/4 cup sugar
1/4 cup fresh lime juice
12 mint leaves
3/4 cup rum
1 cup sparkling water, chilled
1 cup crushed ice
4 sprigs mint
4 slices cucumbers
4 lime wedges
Directions:
1. Place 2 c water and chopped cucumber in a blender; process til smooth. Strain through a sieve into a med bowl; discard solids.
2. Place 1 T sugar, 1 T lime juice, and 4 mint leaves in a 2 c glass measure; crush with a wooden spoon or muddler. Add 3 T rum and about 1/2 c cucumber mixture; stir to dissolve sugar. Stir in 1/4 c sparkling water. Place 1/4 c ice in a 12 oz glass and pour mixture over. Garnish with 1/4 of the mint sprigs, cucumber slices and lime wedges.
