Cucumber Lime Salad

Ingredients:

Directions:

  1. Peel cucumber
  2. Cut in half
  3. Scoop out seeds
  4. Cut into medium size pieces
  5. Squeeze on the juice of a lime
  6. Add drizzles of olive oil
  7. Salt and pepper to taste
  8. Stir to combine
  9. Add some chopped cilantro if desired
  10. Serve at once
  11. Note: for me, fresh lime, good olive oil, coarse kosher salt and fresh cracked black pepper was perfect for me- although I love cilantro I preferred to leave it out in this recipe.
