Cucumber Carrot Salad

With garden cukes, I wanted to try something different. My family really enjoyed this salad version. I used a mandolin but any food slicer that slices paper thin veges works well. Neither overly sweet or sour tasting, the dressing combination is pleasing- but adjust to your liking.
Ingredients:
4 large cucumbers, washed and skin on
1 large sweet carrot, more if desired
1 small red onion
dressing
1 cup mayonnaise
1 tsp dijon mustard
1-2 tbs malt vinegar
1 tsp dill weed
2 tsp sugar or splenda
sea salt to taste
Directions:
1. Slice cucumber, red onion and carrots paper thin
2. Place in a bowl
3. Combine the mayo, mustard, dill weed, salt, sugar and stir to blend all.
4. Blend well into veges.
5. Mixture will produce liquid and that is just fine
6. Adjust salt to taste if needed
7. Serve at once or chill well; serving with slotted spoon, to remove vegetables from the liquid.
