Cucumber, Cantaloupe, and Squash Salad |

This is another tasty salad from Martha!! It is so good, I just love it in the summer - Ingredients:
1 cup plain yogurt |
1 finely grated lime, zest of |
1 tablespoon fresh lime juice |
1/2 teaspoon coarse salt |
1/2 teaspoon ground cumin |
1/8 teaspoon fresh ground pepper |
3 yellow sumer squash, unpeeled (about 1 lb) |
1 english cucumber, unpeeled |
1 1/2 tablespoons unseasoned rice wine vinegar |
1 teaspoon coarse salt |
1/2 large cantaloupe, rind removed, cubed |
Directions:
1. Make the dressing: Combvine the yogurt, lime zest and juice, salt, cumin and pepper. Cover and refrigerste 20 minutes. 2. Make the salad: Using a vegetable peeler or a mandolin, shave squashes and cucumber into wide ribbons, and refrigerate. 3. Just before serving, drain cucumbers, and squash ribbons and toss with cantaloupes - drizzle with dressing. |
