This is from the May 2010 issue of Cooking Light, and it looks perfect for the upcoming summer!
Ingredients:
1 cup cucumber, chopped, peeled, and seeded (about 8 oz)
1/3 cup frozen apple juice concentrate, unsweetened
1/4 cup cold water
1/4 cup fresh mint, chopped
10 ice cubes (about 4 oz)
Directions:
1. Place all ingredients in a blender and process until smooth (2 minutes).
2. Serve immediately.
