A wonderul light, healthy , tasty salad which can be served with your main dish or eaten alone with a slice of your favorite bread!
Ingredients:
1 lb. cucumbers (about 2 medium), peeled and chopped
1/2 lb. fresh tomatoes, chopped
4 scallions, minced
1/2 cup fresh mint, finely chopped
1/2 cup parsley, finely chopped
3 tablespoons lemon juice
2 cloves garlic, crushed
1 cup plain yogurt (low-fat works also!!)
black pepper to taste
Directions:
1. Combine cucumbers and tomato in bowl.
2. Mix lemon juice, yogurt, garlic, pepper, mint and parsley together. (In separate bowl).
3. Pour mixture over cucumber and tomato mixture and stir.
4. Chill for 1 hour and serve.
5. This is best served immediately after chilling.
6. Enjoy!!
