Cucumber and Radish Salad

Cucumbers, radishes and peppers are combined with a spicy Orange Vinaigrette for a light crunchy salad.
Ingredients:
1 pint cherry tomatoes
3/4 lb japanese cucumber (sliced lengthwise)
2 cups red radishes (sliced thin)
2 cups daikon radishes (sliced thin)
1/2 cup red onion (sliced thin)
4 green onions (sliced thin)
1 serrano pepper (minced)
1 cup yellow bell pepper (diced medium)
2 tablespoons dill (chopped)
4 tablespoons cilantro (chopped)
2 tablespoons fresh garlic cloves (minced)
3 ounces seasoned rice vinegar
1 tablespoon fresh orange juice
1/2 teaspoon fine sugar
1 tablespoon thyme (chopped)
3 tablespoons extra virgin olive oil
1 head butter lettuce
Directions:
1. Place sliced cucumbers and cherry tomatoes in a bowl. Add radishes, onion and peppers.
2. Add fresh dill, cilantro and 1-tablespoon chopped garlic. Season with fine sea salt and black pepper to taste. Toss salad, cover with plastic and chill for 30-minutes.
3. In a small bowl combine remaining garlic, rice vinegar, fresh orange juice, fine sugar and fresh thyme. Wisk in olive oil. Reseason with fine sea salt and black pepper to taste.
4. Toss salad with dressing and serve on chilled salad plates lined with Butter Leaf Lettuce.
5. Garnish with chopped Cilantro.
