For summer's picnics or just hanging around the pool, grilling or the park, something fast and easy as well as flavorfull to make. Deliciossso!!!
Ingredients:
1 cucumber, peeled and roundly-shape cut
3 slices pineapple
1/2 red onion, thinly sliced
2 avocados, ripe but firm
1/3 cup olive oil
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon black pepper
Directions:
1. Cut and cube in small pieces pineapple and avocado. Cut cucumber lenghtwise, cutting rounds and seeding with small spoon. In large bowl add pineapple, avocado and cucumber. In small bowl mix onion, salt, pepper, oilive oil and freshly squeezed lemon juice, whisk well. Pour over pineapple, avocado and cucumbers, tossing well. Refrigerate for 15-20 minutes.
