Cuatro-Peppered Goat Cheese Log

Easy, quick, and out of the ordinary. One of Hotter Than Hell 's yumny appetizers that can be made up to three days before serving. Hotchacha!
Ingredients:
2 teaspoons whole black peppercorns
2 teaspoons whole white peppercorns
2 teaspoons dried green peppercorns or 2 teaspoons pickled green peppercorns
1 teaspoon northern new mexico red chili (caribe)
2 tablespoons finely minced flat leaf parsley
6 ounces goat cheese (one log, montracher preferred)
Directions:
1. Grind black, white, and green peppercorns and combine with caribe. Mix well. Spread pepper mixture on a sheet of waxed paper the same length as your cheese log.
2. Roll cheese log in pepper mixture, coating cheese uniformly then roll log into parsley. Serve immediately with white crackers for spreading.
3. OR wrap in plastic wrap and refrigerate up to 3 days. Bring to room temperature before serving.
