I think potatoes is one of my favorite things to eat. But it is nice to not always eat it fried. So, theses are flavorful and healthier. Makes a great side dish.
Ingredients:
4 med yukon golden potatoes(can use red or idaho)
italian seasoning
salt
garlic powder
olive oil
Directions:
1. Pre heat oven 425 degrees.
2. Cut potatoes into bite size cubes(try and keep all the same size so they all cook evenly at the same time.)
3. Sprinkle olive oil over potatoes
4. Season potatoes lightly with seasonings and mix potatoes so they are evenly coated with everything.
5. Bake until golden about 30 min. in my oven.
6. **can add a little bit of red pepper flakes to make spicy, or a little parm. cheese when you pull them out of oven for added flavor**
