Crusty Fish Fillets with Ranch Topping

Ingredients:
4 (4-ounce) orange roughy or flounder fillets
3 tablespoons fat-free ranch-style dressing
1 cup fat-free wheat cracker crumbs (about 22 crackers)
1/4 teaspoon freshly ground pepper
1/4 cup finely chopped cucumber
1/4 cup finely chopped tomato
2 tablespoons fat-free ranch-style dressing
Directions:
1. Spread both sides of fillets with 3 tablespoons dressing. Combine cracker crumbs and pepper in a shallow dish; dredge fish in crumb mixture. Place fish in an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray.
2. Bake at 400° for 15 to 20 minutes or until fish flakes easily when tested with a fork. Drizzle with 2 tablespoons dressing; top with cucumber and tomato.
