Crustless Spinach Quiche

You can have this for lunch, dinner, with salad.
Ingredients:
1 tablespoon vegetable oil or canola oil
1 onion, sliced
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs beaten
3 cups cheese (your choice)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
pinch of nutmeg
Directions:
1. 1. Preheat oven to 350 degrees f (175 degrees c).
2. 2. Lightly grease a 9 inch pie pan or quiche dish.
3. 3. Add oil to skillet over medium-high heat.
4. 4. Add the sliced onions and cook, stirring occasionally, until onions are soft.
5. 5. Stir in spinach and continue cooking until excess moisture has evaporated.
6. 6. In a bowl, combine eggs, cheese, salt, pepper and nutmeg.
7. 7. Add spinach mixture and stir to blend.
8. 8. Scoop into prepared dish.
9. 9. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
