A filling high-protein meal. Add what ever veggies you have on hand. The cheese adds 30 cal per serving and is optional but does give it a little more colour, in place of the egg yolks.
Ingredients:
3 whole eggs
4 egg whites
1/2 cup 1% milk
1/2 cup flour
1 tsp baking powder
1/2 cup 1% cottage cheese
1/2 cup chopped parsley
125 grams lean ham (5 slices--chopped into small bits)
3/4 cup grated cheddar
1 tsp canola oil
1/4 cup diced onion
1/4 cup diced zucchini (outer areas only)
1/4 cup diced red pepper (try water packed canned)
1 tomatoe
Directions:
1. Heat oil in pan, and sautee raw veggies.
2. Beat eggs and egg whites.
3. Add remaining ingredients and mix well. Cool veggies slighlty and mix in to egg mixture.
4. Pour into baking dish sprayed with non-stick cooking spray.
5. Top with thinly sliced tomatoe.
6. Bake 400 for 15 then reduce temp to 350 for an additional 20-35 minutes (depending on thickness in pan).
