Crunchy Plank Salmon

Ingredients:
1 pound(s) skinless boneless salmon filet
1 tablespoon(s) olive oil
1/4 cup(s) dijon mustard
2 tablespoon(s) lemon juice
1/4 cup(s) low fat mayonaise
1/4 cup(s) fresh chives chopped
1/4 cup(s) bread crumbs
2 teaspoon(s) lemon zest
Directions:
1. soak planks (cedar, oak, etc) in water for 2 hours minimum
2. heat grill to 400 degrees with hot fire on one side and no fire on the other
3. mix dijon mustard, mayonaise, chives, lemon juice and let stand for 20 minutes
4. Pat slamon filet dry and lightly coat filet in olive oil
5. Place filet on soaked planks
6. Slather mustard/ mayo mixture on fish covering sides to seal in flavor
7. Sprinkle breadcrumbs and lemon zest on top
8. Place planked salmon over direct heat for 5 minutes
9. Move plank to indirect heat until fish is opaque and begins to flake. Usually another 5-10 minutes
10. Have spray bottle with water available to douse planks in case they catch fire
